Roasted Red Pepper Frittata

Roasted Red Pepper Frittata

Ingredients:

  • 2 tsp olive oil, divided
  • 1/2 cup chopped celery
  • 2 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 1 Tbsp grated Parmesan Cheese
  • 1 Tbsp chopped fresh flat-leaf parsley
  • 1/2 cup chopped sweet red peppers
  • 1/2 cup chopped onions
  • 8 egg whites
  • 1/8 tsp ground black pepper

Instructions:

  1. In a large ovenproof frying pan over medium heat, warm 1 tsp oil.
  2. Add the red peppers, celery, onions, and garlic; cook, stirring frequently for 4 to 5 minutes, or until tender.
  3. Remove from heat and set aside.
  4. In a large bowl lighlty whisk together the egg whites, parsley, oregano, and black pepper.
  5. Stir in the vegetable mixture.
  6. In the same frying pan over medium heat warm the remaining 1 tsp oil.
  7. Add the egg mixture and cook until brown around the edges.
  8. Cover the pan and reduce heat to low.
  9. Cook for 3 to 4 minutes, or until the eggs are set.
  10. Meanwhile, reduce heat to low.
  11. Cook for 3 to 4 minutes, or until the eggs are set.
  12. Meanwhile, preheat the broiler.
  13. Sprinkle the frittata with the Parmesan.
  14. Place the pan about 5″ from the heat and broil for 1 to 2 minutes, or until golden brown.
  15. Serve cut into wedges.
