Rainy Day Beef Macaroni Chowder

This chowder recipe is a perfect meal starter on a rainy day.  All it takes to make this recipe a little spicier when it is cold and raining outside is a bit more black pepper.

Preparation and cooking Time: 2 hours

* 1/2 lb. beef, cubed
* 1 cup elbow macaroni
* 1 can or 12 oz. evaporated milk
* Water for boiling and broth
* Salt and pepper to taste
* Carrots and cabbage (optional)

1.  In a large pot, boil beef for about 1 hour and 30 minutes or until very tender.  Once beef is tender, set the broth aside while cutting or shredding beef into small pieces

2.   Transfer broth to a smaller pot, bring to boil and add macaroni together with beef.

3.  When macaroni is almost cooked, add milk (and vegetables, if using) and stir frequently over low heat.  Add salt and pepper to taste and remove from heat once macaroni is done.
4.  Enjoy with toasted or French bread.
