Peanut Butter Pecan Muffins

Ingredients:

There is nothing like freshly baked muffins in the morning for breakfast with a nice hot cup of
coffee. I hope you enjoy this recipe.

  • 1 1/2 cups sifted self-rising flour
  • 1 cup chopped pecans
  • 1/2 cup firmly packed brown sugar
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup butter, melted and cooled
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat oven to 400 degrees.
  2. Grease muffin pans.
  3. Combine flour, pecans, and brown sugar in mixing bowl; set aside.
  4. In another bowl, beat egg; stir in milk, butter, and vanilla.
  5. Add liquid ingredients all at once to flour mixture.
  6. Stir only until flour is moistened.
  7. Fill muffin cups 2/3 full.
  8. Bake about 15 minutes or until golden brown.
  9. Serve warm with butter or jam and enjoy!
