Honey-Glazed Pork Chops

This Roman-inspired recipe uses a great combination of honey and balsamic vinegar to bring a palate-teasing sweet-sour flavor.  This recipe serves four—a perfect dish for Sunday lunch with friends or family.

Preparation time:  30-45 Minutes
Cooking Time: 12-14 Minutes

INGREDIENTS
4 (10-oz.) bone-in pork chops, julienned or cut into thin strips
3 tbsp. extra-virgin olive oil
Kosher salt and freshly ground black pepper
? cup balsamic vinegar
2 tbsp. honey
4 tbsp. unsalted butter
1 sprig fresh rosemary, torn into 1″ pieces

INSTRUCTIONS
1.  Arrange the chops on plate and season with salt and black pepper, pour oil over pork chops and let stand for about 30-45 minutes.

2. While pork is marinating, heat grill.  Then in a small saucepan, mix honey and vinegar and cook on medium heat.  Constantly stir until reduced to about 1/4 of a cup before adding rosemary and butter.  Remove from heat and set aside.

3. Grill pork chops and turn occasionally until cooked evenly and browned for about 15 minutes. Baste evenly on each side with honey and vinegar mixture.  Put pork chops on a serving plate and let rest for about 7 minutes before serving.
