Healthy Pumpkin Muffins

Ingredients:

  • 1 egg
  • 1/2 cup milk
  • 1/2 cup canned pumpkin
  • 1/4 cup vegetable oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup seedless raisins (or choc. chips)

Instructions:

  1. Heat oven to 400
  2. Grease bottom of muffin cups.
  3. Mix all ingredients and stir until flour is moistened and mixed well.
  4. Fold in raisins (or other)
  5. Fill muffin cups 2/3 full.
  6. Sprinkle a pinch of sugar over each muffin.
  7. Bake for 18-20 minutes.
