Healthy Beef Recipes
Beef is full of protein and consuming it can aid in the prevention of muscle mass loss. But, the important thing is to choose grass fed, organic, antibiotic free human lean beef for all your recipes. In addition, beef should be considered almost a condiment in your recipes to keep fat and cholesterol lower. You don’t need much to get your protein needs met for the day.
There is a lot you can do with beef. Add to salads, toss with rice and stuff in a bell pepper. The list is endless how you can add a small amount of beef to a dish and make the flavor and health of the dish soar. You can also make dishes of all ethnicities with beef. From Asian, to Mexican, to good old fashioned American fare, it’s all available to you.
The following is a great recipe to whip together that meet those requirements. Use your creative side to come up with more, such as adding the marinated meat to salads for another quick meal idea. Alter the basic marinade by adding soy sauce instead of Worcestershire sauce, and substitute the olive oil for sesame oil, and the dried mustard and pepper with ginger or five powdered spice, and the lemon juice with orange juice for a nice Asian flavor.
2 TBS Cold Pressed Extra Virgin Olive Oil
1 Beef Skirt Steak (about 1 lb)
1 Large Onion, sliced to strips
2 Cloves Garlic, mashed
1 Large Green Bell Pepper, cut into strips
1 Large Red Bell Pepper, cut into strips
1 Large Yellow Bell Pepper, cut into strips
12 small whole wheat tortillas, warmed
Sea Salt & Pepper to taste
Prepared Spanish Rice
1/2 Cup Cold Pressed Extra Virgin Olive Oil
1/2 Cup Low Sodium Soy Sauce (or Coconut Aminos)
1/2 Cup Minced Onion
1 tsp. Dried Mustard
1 tsp. Ground Black Pepper
1/4 Cup Vinegar
!/4 Cup Lemon Juice
4 Cloves Garlic, mashed
2 TBS, Worcestershire Sauce
Place skirt steak in enough marinade to cover in a Ziploc bag turning to coat all sides. Close bag and leave in fridge for at least 6 hours, or overnight. Remove steak from marinade, slice in strips. In a large iron skillet, heat the 2 TBS Olive Oil until hot and add the onion, garlic, and bell peppers. Cook until the onions are soft. Add the strips of steak, the rest of the marinade and cook until the steak is cooked through and the onions are caramelized.
Serve with warned tortillas, guacamole, Spanish rice, and salsa
Variations: Add other veggies to the mixture such as broccoli, zucchini, shredded carrots. Whatever you have on hand will add to the dish.
