Easy Chicken Castellina  Recipe

Chicken Castellina sauteed chicken smothered in a delicious cream sauce with pancetta, sun-dried tomatoes and fresh cheeses and served over your favorite pasta.

Ingredients:

Sauce:

  • 1/4 cup diced pancetta (or bacon)
  • 6 tablespoons butter, cubed
  • 1 teaspoon garlic, chopped
  • 1/4 cup diced sun-dried tomatoes
  • 1 1/2 cups heavy cream
  • 1 1/2 cups milk
  • 1 oz cornstarch
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chopped smoked Gouda cheese
  • 1/4 teaspoon salt
  • 1 tablespoon chopped fresh rosemary
  • 1 (8.5-oz.) can sliced artichokes, drained
  • 1/4 teaspoon pepper
  • 1/4 cup sliced mushrooms
  • 1 1/2 lbs pasta of choice, cooked according to package directions

Chicken:

  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 lbs skinless/boneless chicken breasts, cut in 1 – 1 ½” pieces
  • 3 tablespoons olive oil
  • 1/4 cup white wine chopped fresh parsley, for garnish

Description:

1. Prepare sauce: Place pancetta (or bacon, if desired) in 3-quart saucepan. Turn heat on medium-high and cook until crisp and golden; reduce heat; add butter and melt; add garlic and sun-dried tomatoes. Saute mixture for about a minute, stirring frequently; do not brown.

2. Whisk in cream, milk and cornstarch; increase heat to medium-high; whisk in Parmesan and Gouda. Once the cheese has melted and is whisked smooth, add remaining sauce ingredients; bring to boil, stirring constantly.

3. Remove from heat and let stand; do not cover.

4. Prepare chicken: In shallow dish, combine flour, salt and pepper; whisk to combine. Dredge chicken in mixture, coat well and shake off excess flour.

5. In large heavy skillet, heat olive oil; add chicken in a single layer; cook until golden brown on both sides and juices run clear.

6. CAUTION WITH THIS STEP: Add wine to pan (you will get a low flame in the pan from the alcohol). Toss gently until wine has evaporated. Add reserved cheese sauce; bring to boil over medium-high heat; heat through.

7. Meanwhile, cook pasta al dente (to the bite); drain; do not rinse. Transfer to large serving platter. Top with chicken and pour sauce over. Serve hot.
