Cheesy Vegetable Pasta
This nutritious comfort food is so easy to make and is a great way to get your kids to eat their veggies, and enjoy them. A filling side to any meal.
16 ounces, uncooked spiral pasta
2 medium carrots, chopped
1 cup broccoli, chopped
1 (16 ounce) block Velveeta cheese, cubed
1 cup milk
1 Tablespoon mustard
1/2 teaspoon chili powder
Bring 3 quarts water to a boil in large saucepan. When boiling add pasta and cook as per directions on package.
During the last 5 minutes of cooking add the vegetables. When done cooking drain pasta and vegetables, return to the pan.
Stir in cheese, milk, mustard, and chili powder. Mix well. Continue to heat over medium heat , until cheese is melted and pasta and vegetables are hot and gooey. Serve.
